Fall is just around the corner and for me that means that baking is in full swing. There are SO many recipes that I really want to try this Fall and Holiday season and some that I’ve tried that I loved and want to share. With a toddler in the home, I really cannot spend a ton of time baking like I used to, but I can bake some homemade treats using some store-bought, pre-prepared ingredients and still impress my guests. Besides the Pumpkin flavor that I love so much for that fall, I also love Apple flavored items! The Classic Apple Pie that I posted about is a recipe that I frequently use too! Here is a recipe for some delicious and easy Apple Spice Cookies with a Caramel Apple Frosting. Like I said, the ingredients are store-bought items but they are modified to change their end product!
These cookies are so simple to make and are always a hit. I plan to make another batch for work next week- I know they’ll appreciate it. I usually get asked… “what did you bake again?” ;).
1 box of spice cake mix, any brand
1 20 oz can of apple pie filling
Preheat the oven to 350 degrees.
Use a potato masher or fork to light mash the canned apples. You want them mashed but slightly chunky.
Combine the canned apples and spice cake mix, mixing well.
Drop by large tablespoon onto a greased baking sheet.
Bake 14-16 minutes or until light browned.
*Makes approximately 2 dozen cookies
Yum! I mean, seriously, how easy are those cookies?! The icing gives them a nice final touch and these were gone in a heartbeat. I love making simple recipes that are delicious!
