Meal planning has brought me so much stress relief and saved us so much money. One area that I’ve gotten better in is breakfast. I am too good at skipping breakfast, which is something I shouldn’t do!

On The Go Breakfast with Bays English Muffins

I love to prepare breakfast in advance of the morning we need them. There are so
many ways to prep breakfast and have it convenient and ready to go.

Avocado Toast with Egg and Cheese

Avocados are so nutritious and delicious! There are so many ways to serve up avocados but my absolute favorite way is as avocado toast. This can be enjoyed any time of the day, but I love it at breakfast on a Bays English Muffin the most. I also add egg and cheese to make this breakfast sandwich more delicious! 

First I mash the avocado into a paste and add some garlic salt and pepper. You can either scoop the avocado out of the peel or you can cut it into cubes inside the peel and then squeeze them into a bowl. After browning the Bays English muffin with butter, I spread the avocado paste onto both sides of the English Muffin. You can toast the muffin in the toaster but I like to toast it on the stove with butter. 

The egg is best made inside a biscuit cutter or something round and the size of the English muffin. This ensures that it keeps the shape and is easy to place on the muffin. Make sure you spray the inside of the biscuit cutter so the egg doesn’t stick. While the egg is cooking, heat up your roasted red pepper in the same skillet on the side.

Next comes the fun part – assembly. You’ll want to add the mashed avocado onto both sides of the English muffin and then on one side, add the warmed roasted red pepper and then on the other side the egg and cheese. This sandwich is super quick, nutritious and perfect for on the go!
