What are you favorite meals to eat? One of my all time favorite cuisines is Chinese and I’ve never really been able to find a replacement for ordering from a local Chinese place. However, in an effort to save money, I’ve been exploring more “copycat” recipes with healthier ingredients at home!
This Beef & Broccoli Stir Fry is a way to get the flavor of Chinese takeout without breaking your New Year’s Resolutions! This Beef and Broccoli Stir-fry has no sugar, gluten, or soy. You’re going to love this meal, it is quick and perfect for a weeknight dinner. Be sure to add it to your meal plan! Even if you don’t have dietary restrictions, this recipe can be made with other ingredients and its just a delicious!
Beef with Broccoli Stir Fry
Ingredients:
- 1 pound boneless chuck or round steak, cut into 1 inch strips
- 3 tablespoons arrowroot, divided
- ½ cup and 2 tablespoons water, divided
- ½ teaspoon garlic powder
- 2 tablespoons olive oil
- 4 cups frozen broccoli florets, thawed
- 1 onion, halved and sliced
- ⅓ cup liquid aminos
- 2 tablespoons Swerve Brown Sugar alternative
- 1 teaspoon ground ginger
Instructions:
Place sliced beef into a zip-top freezer bag. In a small bowl, mix together 2 tablespoons arrowroot, 2 tablespoons water, and garlic powder. Pour over beef and seal the bag. Toss the bag to coat the beef evenly.
Heat a large, heavy skillet over medium-high heat. Add 1 tablespoon of olive oil and swirl around the skillet. Cook the beef, browning well on all sides, until almost cooked through. Remove beef from skillet and keep warm. Add additional oil if needed.
Add remaining oil to skillet. Stir in the onions and cook until translucent, about 2 minutes. Add the broccoli and cook until heated through.
Meanwhile, in a large measuring cup or bowl, mix together the liquid aminos, ½ cup water, 1 tablespoon arrowroot, Swerve Brown Sugar, and ground ginger. Mix together until blended.
Return the beef to the skillet with the onions and broccoli. Pour mixed liquid over the beef and vegetables. Cook for 3 to 5 minutes, stirring often, until the sauce has thickened. Serve.
No diet sensitivities? You can use these substitutions in equal amounts:
Cornstarch = arrowroot
Liquid aminos = soy sauce
Swerve Brown Sugar = brown sugar
