Is this similar to Blueberry Muffins?
Absolutely! My husband loves homemade blueberry muffins. In fact, this recipe can go into 12 muffin cups and be baked into muffins if you’d prefer. However, I would stick with the bread, you won’t be disappointed!!
Can I use Frozen Blueberries?
I’d highly recommend fresh blueberries for this recipe. If you do use frozen ones, bring them to room temperature before mixing them into the bread. I find that frozen ones break apart easier so fresh are just much better. If all you have are frozen ones, that’s okay!
Can I Make a Glaze or Topping for this?
Yes, that would be amazing!! I would make a simple powdered sugar, cream and vanilla icing or a cinnamon streusel topping.
Icing Topping Recipe
Mix together 2 cups powdered sugar, 2 tablespoons softened butter, and 1 teaspoon of vanilla. Then add in milk 1Tbsp at a time until desired consistency. Drizzle this over top the bread after it cools.
Cinnamon Streusel Topping Recipe
Mix together 1/4 cup all-purpose flour, 2 tablespoons of brown sugar and 1/4 teaspoon of ground cinnamon. Cut 2 tablespoons of cold butter into the mixture with a fork or pastry cutter. Sprinkle this over top the bread before you bake it.
How To Make Blueberry Bread
Gather all of your ingredients and preheat your oven to 350°F. Also, grease and flour a 9×5 inch loaf pan.
In a large bowl mix together flour, sugar, baking powder, and salt.
Cut butter into cubes, add to bowl with flour mixture. Using a pastry blender or 2 knives used scissor-fashion, cut butter into flour mixture until it resembles fine crumbs.
In a medium size bowl beat together milk, eggs and vanilla.
Stir egg mixture into flour mixture until moistened.
Gently fold in blueberries until evenly dispersed.
Pour batter into your prepared baking pan. Sprinkle a few extra blueberries on top. Add your cinnamon streusel topping too, if you made it (recipe above).
Bake 60-80 minutes or until toothpick insert into the center comes out clean.
Allow to cool for at least 10 minutes before slicing and serving.
