Keto-Friendly Cheesy Broccoli Casserole

Are you following the Keto diet? Even if you’re not following a specific diet, you may be looking for healthier dinner alternatives for some of your all time favorite meals. One of the best sides for dinner is cheesy broccoli casserole but it is hard to find a healthier alternative. The recipe for Keto-Friendly Cheesy Broccoli Casserole will allow you the same taste of regular broccoli casserole but with a few modifications as shown below. You will love this casserole!!

Keto-Friendly Cheesy Broccoli Casserole

Printable Recipe

Ingredients: 

  • 10 oz package of Birds Eye Steamfresh Riced Cauliflower (or comparable)
  • 2 C. steamed broccoli florets
  • 1 1/4 C. heavy cream or Half & Half
  • 1 1/2 C. shredded cheddar cheese
  • 2 tbsp. butter
  • 2 tsp. minced garlic
  • salt & pepper to taste

Directions: 

Preheat the oven to 350 degrees.
Heat the riced cauliflower according to package directions.
Heat the butter in a small saucepan along with the garlic. Pour in the cream/Half & Half and bring to a boil.
Reduce the heat and the add in the shredded cheese and stir until melted.

Combine the riced cauliflower, cheese sauce and broccoli florets.
Add salt & pepper to taste.
Pour the casserole into an 8×8 baking dish.
Bake for 15-20 minutes or until heated through.

    Oh boy this does look good..I,need to start on a diet I’ve heard some about the keto diet I would love to learn more about it ..I can’t wait to try this thanks

    While I am not on a keto diet, I am trying to cut carbs and eat healthier in general. I love cheese and I love broccoli so when I saw this casserole I KNEW I had to try it!

    Wait riced cauliflower? Is that cauliflower that is cut up like rice sizes? What a great idea, I’ll have to see if my local stores carry that.

      Yep! You can buy it made by brands like Green Giant or make it yourself 🙂

    Stouffers used to make a terrific broccoli cheese casserole as a side dish in their frozen meals. But it’s long since been discontinued. I’ve been dying to try that Riced Cauliflower. My family loves to order this recipe at restaurants. It’ll be great being able to finally perfect it at home!
