I am always looking for a healthy snack to have on hand when I am rushing out the door in the morning or when I am tired after lunch time at work. I tend to grab convenient items like chips or cookies — not the healthiest items. However, in the New Year I’ve decided to not only eat better but to take better care of myself. I am sharing this easy to make recipe for Chocolate Chip Almond Energy Bites and hope that you make a batch to have on hand when you need something sweet!
Ingredients –
1/2 C. almonds, ground (I used my food processor)
1 C. oatmeal
1/2 C. creamy peanut butter
1/2 C. mini chocolate chips
1/3 C. honey
Directions –
#1. Combine all the ingredients in a large bowl and mix well. It will be sticky so don’t be afraid to use your hands.
#2. Roll into 2″ balls and place on a plate or baking sheet.
#3. Place in the fridge to set for 1 hour and then transfer to a bowl and store covered in the fridge.
What do you think? These are absolutely delicious and easy to make with ingredients you may already have in your home. Plus, you can improvise and use other nuts or raisins instead of almonds and chocolate chips. The opportunities are endless with these. Make a batch and keep them handy for those times when you need a snack. I like to keep a few on my desk at work — easy to reach and better for me than candy or potato chips. I made a batch and had them at work when my co-workers asked me to make more to share. Now, we are all talking about ways to curb our cravings and eat healthier items!
