These chocolate chip breakfast muffins are delicious, and healthy!
Anyone else struggle like I do to eat breakfast, or is it just me? I’ve been finding ways to make easy grab and go meals on the weekends so I can just be ready for the week ahead. Some of my favorites are these No Bake Energy Bites and these Chocolate Chip Almond Energy Bites. These make my mornings easier!
Meal planning has changed my life, honestly. As a busy Mom who works outside the home and has a child with a pediatric feeding disorder, we need organization. My husband and I work together on the weekends to get the house in order and prepare for the week ahead. One of the key things we do is meal plan.
Meal planning helps us all to know what’s on the menu for dinner before we leave for work in the morning. Then, I get home and I already know what I am making and know that I have the ingredients for the recipe at home because I shopped based on the meal plan.

Healthy Chocolate Chip Breakfast Muffins
Some other things that I like to make are these wholesome chocolate chip muffins!! These muffins are super delicious and easy to make, plus very filling! They’re healthy because they are made with things like almond milk, yogurt, bananas and more!
You’ll need to gather your ingredients – flour, baking soda, salt, mashed bananas, cinnamon, honey, etc. and have it all ready for the mixing and assembly! Then, preheat your oven to 350 degrees!
In a mixing bowl, mix the dry ingredients together.
In a separate bowl, you’ll want to mix all of the wet ingredients except the chocolate chips – you’ll add those at the end – yum!!
Now, just add the flour mixture into the wet ingredients and mix by hand. Drop in your chocolate chips and fold them in!
I like to use cupcake liners but if you don’t want to, make sure you spray the muffin tin with cooking spray! Fill the muffin tins 2/3 of the way full. Bake 15-20 minutes and let cool!
These are super easy to make, delicious and perfect for preparing on the weekend for the week ahead. They’re even a delicious weekend breakfast too!

Healthy Chocolate Chip Breakfast Muffins
On the go breakfast is key for busy Moms like me! These chocolate chip muffins are packed with nutrition and healthy foods to help power your mornings!
Ingredients
- 1 1/2 cups Flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3 mashed bananas
- 1 tsp ground cinnamon
- 5 Tbsp Honey
- 1 Tbsp Vegetable Oil
- 1 egg
- 1/2 cup vanilla yogurt
- 1 1/2 Tbsp Almond Milk
- 2 handfulls chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Grease a muffin tin.
- In a mixing bowl blend together all dry ingredients.
- In a separate bowl mix use a hand mixture to mix all wet ingredients except chocolate chips.
- Gradually add your flour mixture in thirds and continue mixing with mixer until smooth.
- After, all ingredients are mixed well, drop in chocolate chips and mix by hand.
- Fill muffins tins about 2/3 of the way with batter.
- Bake for 15 to 20 minutes, until baked through.
- Let cool.
- Serve and enjoy!
