The Holiday season for me means lots of baking and entertaining. While I love to bake, I also have a pretty busy life that prohibits me from spending hours in the kitchen baking yummy treats. Krusteaz offers a variety of cookie and dessert mixes that can be used for special treats, cookie exchanges and more. In fact, I made these pretty delicious and easy Triple Chocolate Chunk Cheesecake Bars with their mixes.

Each year, I bake some goodies for my coworkers and also attend some cookie exchanges with my family and friends. I always try to make something different and original. For me this year, it makes these Triple Chocolate Chunk Cheesecake Bars. While they’re not traditional cookies, they are a huge hit with all those who enjoy. The holiday season is all about cozy sweaters, friends and family, and of course, cookies. Krusteaz, makers of premium baking mixes, has an entire line of cookie mixes that are perfect for holiday parties.

Triple Chocolate Chunk Cheesecake Bars

Ingredients:

• 1 Box Krusteaz Triple Chocolate Chunk Cookie Mix
• 2 Eggs
• 8oz cream cheese, softened
• 1/2 cup butter (1 stick), softened
• 1 cup granulated sugar
• 1/2 tsp vanilla extract

Directions:

Preheat oven to 375.

In a medium sized mixing bowl, mix Krusteaz Triple Chocolate Chunk Cookie mix as directed on package (1 stick of butter, 1 egg).

Using a hand mixer or standing mixer, beat cream cheese until smooth. Add sugar, egg and vanilla and beat until smooth.

Spray the bottom of an 8×8″ baking dish with cooking spray. Gently press a little more than 1/2 of the cookie mix into the bottom of the pan.

Pour and spread the cream cheese mixture on top of the first layer of cookie mix.

Spoon pieces of the remaining cookie dough on top of the cream cheese mixture.

Bake for 12-15 minutes or until cream cheese is set and chocolate chip cookies are done on top.

Allow bars to cool completely and then slice into squares.

Yum!! These bars never last long in our house. I then just put them in little goodie bags and served them as a cookie in our cookie swap. They’re super easy and delicious.
