Cookie Butter is so DELICIOUS! Honestly, if I didn’t control myself I could eat the whole jar in one sitting. If you’ve not tried cookie butter, you’re in for a treat. I love a spoonful of peanut butter sometimes and I also love a spoonful of cookie butter for dessert. Limiting myself is hard, though!
One of my favorite desserts is Rice Krispies simply because they’re so delicious and so easy to make and customize to your liking. You can make Christmas Tree ones around the Christmas Holiday, Pumpkin ones around Halloween and more! You can even make these Hot Cocoa ones for a party or special treat.
These cookie butter Rice Krispies have quickly become my new favorite dessert to make and share. My friends and family love these and think that its the perfect combination of ingredients. You’re going to have to make these. Plus, they’re dairy free!
Cookie Butter Lover’s Rice Krispie Treats
INGREDIENTS:
- 1 package of marshmallows (10 ounces)
- 4-5 cups crispy rice cereal (such as Rice Krispies, to desired texture)
- ¼ cup of Earth Balance vegan butter or coconut oil
- ½ cup cookie butter
OPTIONAL TOPPINGS:
- ½ cup semi-sweet or vegan chocolate chips, melted
- ½ cup Trader Joe’s Cocoa Cookie Butter, melted
- 6 Biscoff cookies, crumbled
INSTRUCTIONS
In a large pot melt butter or coconut oil over low heat, then add marshmallows. Stir until marshmallows are fully melted. Then add in the cookie butter continuing to stir until melted.
Begin to add half the amount of rice cereal and stir. Keep adding in until you achieve the desired texture.
Transfer mixture to a greased 9×9 baking dish. Allow to cool.
While cooling, melt the chocolate in the microwave for about 30 seconds. Stir and add additional time if necessary until chips have melted. If using cookie butter, this will melt quicker than the chocolate chips, try at 15 second intervals.
Drizzle chocolate on top of krispies, and top with crushed cookie crumbs – if desired.

These krispie treats do sound so good!! I love making krispie treats and cutting them into shapes with cookie cutters, like dinosaurs, etc. I'd like to try this, we not yet tried cookie butter, this is a fun way to try it.
