Delicious Pumpkin Crisp – Perfect for Fall!

What is your favorite thing about fall? I love the crisp, cool air and the tastes and smell of fall. One of my all time favorite flavors is pumpkin and I am one that can’t wait for the Pumpkin Spice Latte from Starbucks to be released each and every year. I love that the flavor is a special release and something that I can only get this time of the year! 

I also love to bake with pumpkin and the flavors of fall. Some of my favorite recipes involve pumpkins and apples so fall is the perfect time to make these things. I am alone in eating them in my house, though, so my coworkers get them when I do bake! 

Pumpkin Bread is a traditional fall favorite but there are so many more recipes that are perfect for fall. Another one of my favorites is Apple Rhubarb Crisp and this Skillet Peach Raspberry Crisp! What are some of your favorite fall recipes to make?

Pumpkin Crisp

This recipe is super easy to make and is done in 3 layers to make the flavors come together correctly. First, lets start with preheating the oven to 325ºF and slightly greasing a 9×13 baking dish.

Next, stir the cake mix (minus 1 cup for the topping – set this cup aside for later), melted butter and egg until well mixed.

Pour this into the baking dish and press firmly.

For the next layer, you’ll want to whisk the pumpkin, egg, sugar, vanilla, salt, caramel and nutmeg together and them spread on top of the bottom layer.

Finally, add the 1 cup of reserved cake mix into a bowl and then add the sugar, cinnamon and oats. Take the cold butter and cut it in with a fork or pastry cutter until it is in coarse crumbs.

Sprinkle this mixture on top of the dish and bake for 35-40 minutes or until lightly browned. Serve with whipped cream and cinnamon if desired.

Pumpkin means fall - right?! Well, this pumpkin crisp will give you a delicious taste of fall and a wonderful treat!

Recipe:
Preheat oven to 325. Slightly grease a 9x13 baking dish.


To make the first layer:
Stir the cake mix (minus 1 cup for the topping - set this cup to the side for later), melted butter and egg until well mix.
Pour into the bottom of a 9x13 pan. Press firmly.


For the middle layer:
In a bowl, whisk pumpkin, egg, sugar, vanilla, salt, cinnamon and nutmeg.
Spread the second layer over the first, crust layer.


For the top layer or crisp topping:
In a bowl, add the 1 cup of cake mix that you set aside from the first layer.
Add sugar, cinnamon and oats.
Cut in the cold butter with a fork or pastry cutter until it is in coarse crumbs.
Sprinkle over the pumpkin middle layer.


Bake for 35-40 minutes or until lightly browned.
Serve with whipped cream and cinnamon if desired.
