We eat a lot of chicken in our house so we try to find or make up recipes that help us enjoy chicken in different forms. We’ve found that experimenting with different ingredients we like helps us not to get tired of the same old barbeque chicken or grilled chicken. We love this Easy Cheesy Chicken Pasta so I’d love to share the recipe.
Ingredients:
2 chicken breasts,
Taco Seasoning, to taste
Salt & Pepper to taste
1 bag shredded cheddar cheese
1/2 bag shredded Monterey jack cheese
1 Tbsp. butter
1/2 cup milk
1 box Penne Pasta
Bread Crumbs
Directions:
1. Sprinkle taco seasoning, salt and pepper on chicken breast and cook on medium high heat in a pan with a little olive oil in the bottom. Then, dice the chicken into bite sized pieces. Preheat oven to 325.
2. While the chicken is cooking make the cheese sauce and pasta. In a medium sized sauce pan, heat up milk and butter until butter is melted. Add the cheese and stir until smooth. Cook box of Penne pasta until al dente and then strain.
3. In an 8×8″ dish mix the pasta and diced chicken. Then, pour the cheese mixture on top and stir to combine. Sprinkle bread crumbs on top and bake until slightly browned.
Serve and enjoy.
