One of my latest favorites are strawberry muffins. These muffins, however, are made a little differently than your regular muffin.
Simple Ingredients
Strawberry muffins use the traditional muffin recipe that I love but I swapped one simple ingredient out.
I simply swapped the Greek yogurt that I would normally use in this muffin recipe for Hood® Country Style Cottage Cheese.
Hear me out, it is so worth the switch of this one ingredient, you’ll love them! Even if you’re not a fan of cottage cheese, this muffin recipe will have you wanting to substitute for this ingredient all the time.

Basics for Making Muffins
Even if you don’t consider yourself a baker, muffins are a super simple recipe to start with. This recipe for strawberry muffins is particularly simple as it takes minimal ingredients and minimal tools.
Basically you mix the wet ingredients and then the dry ingredients into the wet without over-mixing. Then, you add in the fruit that you’d like to add, in this case small pieces of strawberries.
If you do over-mix, you’ll have dense muffins, so make sure you mix until the ingredients are combined and then fold in the strawberries.
Ingredients Needed for Strawberry Muffins
- All purpose flour
- Baking powder
- Salt
- Butter
- White sugar
- Eggs
- Hood® Country Style Cottage Cheese
- Milk
- Strawberries
How to Make Strawberry Muffins
As I stated above, these strawberry muffins are super easy to make and require minimal ingredients, supplies and time.
The first thing I love to do whenever I am baking or cooking in general is to get all of my ingredients out and ready to go. For this recipe, chopping the strawberries is an essential prep task.
Chop these strawberries into small pieces, like show in the picture below. It will make them mix better into the batter and you’ll get more pieces of strawberry in each muffin.
Preheat your oven too, so that it will be ready to go when its time for you to bake!
Now, it’s time to make the muffins!!
First, you’ll want to mix up the dry ingredients in a medium sized bowl. Dry ingredients are the flour, baking powder and salt.
Next, mix the sugar and softened butter in a medium bowl until lighter in color and creamy!
Add the eggs, stir to combine and then add the Hood® Country Style Cottage Cheese , and milk. Stir to combine.
Third, slowly mix the dry ingredients into the wet ingredients. Combine just until mixed, don’t over-mix or your muffins will be dense.
Finally, fold in your chopped strawberries. Don’t mix vigorously or the strawberries will be squished.
Now, it’s time to put them into your muffin tin. You can either spray the muffin tin with cooking spray or use liners. It’s whatever you prefer.
Place these muffins into the oven and bake until the tops are slightly browned and muffins are cooked through!
Allow them to cool in the pan for about 5 minutes before moving to a cooling rack.

Easy Strawberry Muffins
Strawberry muffins are SO delicious and easy to make. Plus, there's a little twist on them that packs them with protein!!
Ingredients
- 2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup softened butter
- 3/4 cup white sugar
- 2 eggs
- 1 cup Hood Country Style Cottage Cheese
- 1/2 cup milk
- 1 cup chopped strawberries
Instructions
- Preheat the oven to 375 degrees.
- Combine the flour, baking powder, and salt in a large mixing bowl. Set aside.
- Mix together the butter and sugar in a large bowl for about 2 minutes till it starts to get light and creamy.
- Add in your eggs and stir until just combined.
- Stir in the cottage cheese.
- Add the dry ingredients to the wet ingredients and gently stir to combine.
- Carefully fold in the strawberries.
- Scoop the batter into 12 muffin tin spots, sprayed with nonstick spray or lined with muffin liners.
- Bake for 15 minutes until a toothpick comes out clean and the muffins are slightly browned on top.
