Fall is the perfect time to make all the crock pot recipes. From soups, to casseroles, your crock pot is a time saver. My crock pot is always going in the fall. I especially love recipes that are quick to throw together and let them simmer in my crock pot like chili and soups!
Beef stew is something that my Mom always made when I was growing up. I was pretty much the only child that liked it so we got to enjoy it together. There is just something about the combination of beef, potatoes and carrots in a delicious broth that is so comforting. I love finding recipes that take a traditional beef stew up a notch.

Do you have a favorite comfort food? Is it a hot meal like soup or chili or maybe chicken and dumplings? One of my all time favorites is a stew, and this fall beef stew is going to become one of your favorites too. It is flavorful and super easy to make.
- Stew Meat
- Salt & Pepper
- Mushrooms
- Carrots
- Garlic, minced
- Onion, diced
- Beef Broth
- Tomato Paste
- Dijon Mustard
- Thyme
- Barley
- Bay Leaf
- Parsley
- Cream of Golden Mushroom Soup
- Water
- Celery
How to make Fall Beef Stew
This recipe is flavorful and super easy to make right in your Crockpot. First, prepare all of your ingredients and then mix together broth, tomato paste, mustard, soup, water, and seasonings until well combined.
Stir in your stew meat.
Stir in diced vegetables. Add the bay leaf.
Cover and cook on low 6 hours, adding barley at the last hour.
Serve with crusty bread and enjoy.

A delicious and wholesome fall beef stew perfect for the busy weeknights or when you need a comfort meal.
Ingredients
- 2 lbs stew meat
- Salt & pepper
- 8 oz mushrooms, diced
- 6 carrots, diced
- 2 tablespoons garlic, minced
- 1 yellow onion, diced
- 4 cups beef broth
- ¼ cup tomato paste
- 1 tablespoon dijon mustard
- 1 teaspoon thyme
- 3/4 cup quick cook barley
- 1 bay leaf
- 1 tablespoon parsley
- 1 can cream of golden mushroom soup
- 1 can water
- 2 celery stalks, diced
Instructions
- In the crock pot mix together broth, tomato paste, mustard, soup, water, and seasonings until well combined
- Stir in stew meat
- Stir in diced vegetables
- Add bay leaf

Yummy!! one of my favorite stews, and usually how I make my fall beef stew is I make a roast for one dinner and then use everything from that and adding in turnip and squash , so good. @tisonlyme143
