Whether you’re hosting a holiday party or baking with family, this easy gingerbread cookie cups recipe is sure to be a crowd-pleaser. With its warm, cinnamon-kissed flavor and adorable presentation, it’s the ultimate way to bring festive cheer to your holiday table!
Ingredients Needed
- All purpose flour
- Ground ginger
- Cinnamon
- Baking powder
- Baking soda
- Ground cloves
- Salt
- Butter, softened
- Brown sugar
- Egg and Egg yolk
- Molasses
- Vanilla extract
- Cream cheese frosting
- Gingerbread cookie decorations, optional
How Do I Make Gingerbread Cookie Cups
This delicious recipe makes 48 cookie cups which is perfect for a Holiday party or family gathering.
In a small bowl, combine flour, ginger, cinnamon, baking powder, baking soda, cloves and salt and mix well. Set aside.
Beat together butter and sugar until fluffy, about 2 minutes, scraping down the bowl halfway through mixing. Add eggs, molasses and vanilla and beat well until combined. Add dry ingredients, half at a time, and beat just until combined.
Cover and refrigerate for 2 hours.
Preheat oven to 350 and grease a mini muffin pan with nonstick cooking spray. Using a 1 tablespoon portion scoop, scoop batter into pan.
Use a tart shaper dipped in flour to press the dough into a cup shape in the pan. Bake for 8 minutes.
Once you remove cookie cups from the oven, use a tart shaper to press the cookie down into the pan. Let stand to cool before removing from the pan and cooling completely on a wire rack.
When cookie cups are completely cool, place frosting into a pastry bag fitted with a large star tip. Pipe the frosting into each cup and top with sugar cookie decorations if desired.

Notes
These are good and easy to make. If you don't have a tart shaper, you can use the back of a tablespoon, or even a melon baller or simply press down with your thumb or knuckles.
