We love Mexican food, but going out to eat can be expensive! Since we were celebrating my husband’s birthday, I found this delicious recipe for Green Chile enchiladas that my husband LOVED! This recipe makes a 9×13″ dish full of enchiladas but they didn’t last as long as you’d think!
With a 3 month old around, it was tough to find a recipe that I knew I could stop in between to replace a bottle that he dropped, pick him up, change his diaper, etc. However, this recipe was well worth it, assembling the enchiladas was a little time consuming but the end result was amazing!
