I love using my crock pot in the Fall and Winter – there is just something about it that is warm and comforting. Another favorite thing for me to make and eat this time of year is Chili. There are so many different ways to make chili- with or without beans, spicy or not spicy, etc. We just had a chili cook off at work and we even had what someone referred to as a Mexican chili containing rice and all. I love traditional chili- hamburger, chili powder, kidney beans, etc. I’m sharing this delicious and easy recipe for Hearty Chili – one that is sure to please. Feel free to customize as you’d like but this is an awesome recipe. Enjoy.
Ingredients –
1 lb ground beef
1 large onion, chopped
6 oz can tomato paste
14-15 oz can of diced tomatoes with green chilis
1-2 tsp. chili powder (more if you like spicy, less if you do not)
14-15 oz can of kidney beans
Directions –
#1. Brown the ground beef, drain the grease and add in the chopped onion and green pepper. Simmer for 10-15 minutes.
#2. Add in the tomato paste, diced tomatoes with green chili’s, chili powder and kidney beans along with 2-3 cups of water (I always tend to add water by eye).
#3. Cook on low/medium heat for 1-1 1/2 hours.
#4. Serve with shredded cheese, crackers, sour cream and green onions (all optional).
*Makes apporximately 5-6 servings
