Instant Pot Potato Soup

Do you have an Instant Pot? The one thing about an Instant Pot is that you can make SO many amazing things with one device. For busy families like ours, time saving dinner recipes are key! My husband and I both work outside the home and our son has many hours of therapy for his pediatric feeding disorder both at daycare and home. 

Finding quick, easy, affordable and healthy meals for our family is super important to me! That’s where an Instant Pot comes in handy — it is an amazing all in one kitchen appliance that makes a variety of meals — dinners included. 

The one thing that I love the most is that you can put frozen meat like chicken in it and it will cook it through. This helps because many times we forget to take something out of the freezer for dinner that day. 

It also helps us to meal plan better! We know what ingredients we need and what recipes are our favorites. This Instant Pot Lazy Lasagna is a family favorite as are these Instant Pot Garlic Parmesan Wings! Another family favorite is this EASY Instant Pot Potato Soup! 

Instant Pot Potato Soup

Ingredients:

  • 8lbs Potatoes
  • 1 celery stock
  • ½ cup shredded carrots
  • ½ white onion
  • ½ lbs Jowl Bacon
  • 2 stocks green onions
  • 2 cups heavy cream
  • ¾ cup shredded cheese
  • Salt and Pepper

Directions:

Place celery stock, carrots, and onions in veggie dicer, then dump into the Instant Pot.

Next cut potatoes into quarters and place in veggie dicer (keeping dices larger) then dump into the Instant Pot.

Cut the jowl bacon into rough diced pieces and place into the pot.

Add 2 cups heavy cream and water, filling only to cover the soup mix.  

Place the lid on and set timer to the Soup setting + 30mins.

Once the timer goes off, allow the pressure to release slowly and remove the lid.

Top with the fixings of your desire. ( I used green onions, cheese and bacon!)
