Pumpkin Zucchini Chocolate Chip Oatmeal Cookies

Fall is almost here and that means that it is time to bake up some delicious treats! Baking is one of my all time favorite things to do. I love to try new recipes out, share them with you and then take the yummy desserts to work to share. I try to make a variety of things like desserts and treats but also some healthier versions of items too. I like to add in some ingredients that are different but healthy. Since it is almost fall, Pumpkin is in season! I love the cooler air but also love the pumpkin flavored items that appear. I also love to cook some yummy goodies to share  ;). 

Pumpkin Zucchini Chocolate Chip Oatmeal Cookies

Ingredients –

  • 1/2 C. canned pumpkin
  • 1/2 C. shredded zucchini
  • 1 C. butter, softened to room temperature
  • 1 large egg 
  • 1/2 C. brown sugar, packed
  • 1/2 C. white sugar 
  • 1 tsp. baking soda
  • 1 tsp cinnamon 
  • 2 C. flour
  • 1 1/2 C. oatmeal 
  • 12 oz chocolate chips or mini chocolate chips (set a side a few extra to place on top of the cookie dough prior to baking) 
Directions – 
 

Preheat the oven to 350 degrees.

Combine the cinnamon, flour, baking soda and oatmeal; set aside.

In a large bowl, combine the canned pumpkin, shredded zucchini, butter, sugars and cinnamon, mixing well.

Slowly fold the dry ingredients into the wet stirring to combine. Add in the chocolate chips.

Drop the cookie dough onto your baking sheet by rounded tablespoon. Add a few chocolate chips to the top of each cookie.

Bake 14-16 minutes until cooked through and lightly browned.

Yum!! I am so excited to share this delicious recipe with you! I was a little worried about adding in the zucchini but oh it gives the cookies such a delicious flavor and makes them a little healthier. That, combined with the oatmeal, chocolate chips and pumpkin makes these cookies delicious. I cannot wait to make another batch and give them to my best friend who shares my love of pumpkin ;).

Can I just leave out the chocolate chips or do I need to substitute another ingredient? I have a problem with chocolate.
