Pumpkin Zucchini Chocolate Chip Oatmeal Cookies
- 1/2 C. canned pumpkin
- 1/2 C. shredded zucchini
- 1 C. butter, softened to room temperature
- 1 large egg
- 1/2 C. brown sugar, packed
- 1/2 C. white sugar
- 1 tsp. baking soda
- 1 tsp cinnamon
- 2 C. flour
- 1 1/2 C. oatmeal
- 12 oz chocolate chips or mini chocolate chips (set a side a few extra to place on top of the cookie dough prior to baking)
Preheat the oven to 350 degrees.
Combine the cinnamon, flour, baking soda and oatmeal; set aside.
Slowly fold the dry ingredients into the wet stirring to combine. Add in the chocolate chips.
Drop the cookie dough onto your baking sheet by rounded tablespoon. Add a few chocolate chips to the top of each cookie.
