Fall is almost here, and that means time for pumpkin everything?? What are the things about fall that you love the most? Mine are pumpkin flavored items like cookies, coffee, and more and also the leaves changing colors and hoodies!! As for pumpkin flavored items I am always looking for recipes that use real pumpkin puree and are different than the regular pumpkin bread. I’m not sure about you but I catch the sales at the store and stock up on cans of pumpkin around this time of the year for all kinds of good pumpkin recipes. I am always excited to find and share some awesome recipes using pumpkin around this time of the year. This one certainly meets the bill and I hope you like it. Butterscotch and pumpkin will surprise your guests when you serve them!! Here’s a recipe for the Fall including two delicious flavors: Pumpkin and Butterscotch that is sure to please! Enjoy.
1 box of spice cake mix, any brand
2 tsp pumpkin pie spice
15 can of pumpkin puree
1 C. butterscotch chips
#1. Preheat the oven to 350 degrees and line your baking sheets with parchment paper or foil and spray with non-stick cooking spray.
#2. Combine the spice cake mix and the pumpkin pie spice.
#3. Add in the 15 oz of canned pumpkin puree and mix well.
#4. Finally, add in the butterscotch chips.
#5. Place the cookie dough in the fridge 15-20 minutes to set up a bit.
#6. Drop by rounded tablespoon onto your baking sheets about 2-3″ a part.
#7. Bake 8-10 minutes.
*Makes approximately 2 dozen cookies
