I love fish but I never know what to pair it with or how to prepare it. If you’re in the same boat as me I have a delicious and easy recipe to share with you and it covers all of your bases for food pyramid balance. The recipe contains ingredients that you may already have on hand and then adds in some salmon which is great for your diet! Check it out.
Ingredients:
- 2 pounds then egg noodles
- 1 cup cooked salmon
- 1/2 cup broccoli, cut into spears
- 1 tablespoon unsalted sweet cream butter
- 1 tablespoon extra virgin olive oil
- 1 large garlic clove, minced
- 3/4 cup alfredo sauce
- 1/4 cup Parmigiano-Reggiano, shredded
Directions:
- Break cooked salmon into chunks, set aside,
- Roast broccoli in the pan with one tablespoon of butter and 1 tablespoon of EVOO, add garlic last and cook while stirring for the last minute. Set aside.
- Cook egg noodles following package directions. Drain and set aside.
- In a large bowl, add egg noodles and alfredo sauce and toss to evenly coat noodles. Add salmon, broccoli with garlic and toss thoroughly.
- Plate and sprinkle liberally with shredded Parmigiano Reggiano.

Yum!! This sounds so amazing!! I love Salmon so much!! I love incorporating it into pretty much any and every meal I can!! Making this asap!! With some fabulous crusty french bread on the side!!
