Sea Salt Caramel Bars — what’s not to love in that title?! The combination that you’ll find in these bars is phenomenal. The combination of salty and sweet in these bars is something that I truly enjoy! 

I would rather dessert before dinner but that’s another story! I always crave for a bit of sweet after dinner, though and that’s so different than my husband who could do without dessert and just opt for more dessert. 

I am good with any type of dessert – chocolate, caramel, cookies or cakes. It doesn’t matter to me, as long as there is a dessert. I also love to bake and desserts are best baked, right? 

My favorite dessert has to be cheesecake, though! While I said that my husband doesn’t like desserts, I failed to mention that he will eat cheesecake. A few years ago, though, I spoiled him by making a homemade cheesecake. Now he won’t eat any other cheesecake but mine LOL. 

Probably my most popular and crowd winning dessert is the sea salt caramel bars. They’re the perfect combination of shortbread, sea salt and caramel making for a delicious and highly sought-after dessert.

Yummy! Don’t the bars above look absolutely delectable!?! I am SO excited to share this recipe for all of you Caramel and sweet fans out there- as that is what I am!

I made these just because I wanted one and then had to send the rest to work with Garrett as he isn’t a sweet eater! I always get rave reviews from his co-workers when I send in goodies!!! This recipe went over well with his co-workers as well!

The combination of flavors in this recipe is perfect- the salt truly added a good taste to the caramel and then the dough resembles a shortbread!

Sea Salt Caramel Bars!

Sea Salt Caramel Bars!

Sea salt and caramel paired with shortbread! This is the ultimate dessert that will have everyone asking for the recipe!

Ingredients

  • For the Crust:
  • 1 lb. (4 sticks) salted butter at room temp
  • 1 cup sugar
  • 1½ cups powdered sugar
  • 2 Tbs vanilla
  • 4 cups all purpose flour
  • For the Filling:
  • 1 bag (14 oz.) caramel candies (about 50 individual caramels), unwrapped
  • ⅓ cup milk or cream
  • ½ teaspoon vanilla
  • *1 T. coarse sea salt (optional)

Instructions

  1. Preheat oven to 325°
  2. In a large bowl of an electric mixer, combine the butter and sugars. Using mixer on medium speed, beat together until creamy. Add the vanilla and beat until combined. Sift the flour into the butter mixture and beat on low speed until a smooth soft dough forms.
  3. Spray a 9×13 inch baking pan lightly with non-stick cooking spray. Press one-third of the dough evenly into the pan to form a bottom crust. Wrap remaining dough in plastic wrap and chill in refrigerator.
  4. Bake crust until firm and the edges are a pale golden brown approx 20 minutes. Transfer pan to a wire rack and let cool about 15 minutes.
  5. While the bottom crust is baking and the remaining dough is chilling, make the caramel filling. Place the unwrapped caramels in a microwave-safe bowl. Add the cream. Microwave on high for 1 minute. Remove from the microwave and stir until smooth. If caramels are not completely melted, microwave on high for 30-second intervals, stirring after each interval, until smooth.
  6. Once the caramel is melted add in your ½ tsp vanilla and stir until combined.
  7. Pour the caramel filling over the crust. If you are going to salt the caramel sprinkle it on caramel layer now.
  8. Remove the remaining chilled dough from the refrigerator and crumble it evenly over the caramel.
  9. Return the pan to the oven and bake until the filling is bubbly and the crumbled shortbread topping is firm and lightly golden, about 25 – 30 minutes.
  10. Let cool before cutting into squares.

I made these today... in fact, they are in the oven right now. What did I do wrong?! There was nothing "crumbly" about my refrigerated dough...I dotted the caramel with small globs of dough to nearly completely cover the caramel but there is SO much leftover, at least a quarter of the original amount. Given my dough was not firm, I was hesitant to put the entire glob on top. I'm crossing my fingers. :)

Hi Sandy - How did they turn out? I don't think you did anything at all. Sometimes I find that the dough needs to stay in the refrigerator for a little longer than originally thought. However, I am sure they tasted just fine.
