Summertime is my favorite time of the year. Despite living somewhere humid, I enjoy time outdoors as much as possible. We also always plan a vacation to the Outer Banks, NC each and every year. We love the beach, Liam loves the beach, and it is just so relaxing!!
Desserts are my favorite thing to make to share with others. There is just something about monkey bread too – it is super easy to make, delicious and always a hit. It is like one ooey, gooey dessert that everyone will love.
What is Monkey Bread?
Is it a bread or a cake? I guess I’ll go with the bread term since this Tropical Monkey Bread is made with Hawaiian Bread. Simply stated, the bread is cut into small pieces, rolled into balls and put into a bundt pan! For this recipe, you top with shredded coconut before pouring a delicious creamy pineapple sauce over it. Then, you bake to deliciousness!

- King’s Hawaiian Sweet Bread
- Crushed Pineapple
- Butter
- Eggs
- Sugar
- Vanilla Extract
- Coconut Flakes
How Do you Make Tropical Monkey Bread?
First, you’ll want to preheat your oven and get all of your ingredients ready to go! This recipe is SUPER simple and takes just a few moments to prepare! Cut your bread into bite sized pieces (you can roll it into balls if you’d like) and place in a bundt pan that is sprayed with cooking spray.
Now, take a medium bowl and cream your sugar and butter. Add the eggs and beat well. Now, the tropical goodness – add the pineapple and vanilla and mix well. Sprinkle the bread with coconut flakes and then pour this delicious mixture evenly over top!
Bake for about 1 hour!
How Do you Serve Tropical Monkey Bread?
This is a pull apart bread, so be prepared to get your hands messy – but this is the best part. You’ll want to serve this bread warm, so I’d recommend baking it right before you serve! Once it is done baking in the oven, you can turn it over onto a cake platter to serve! Then, just pull apart each of the pieces and enjoy. You can even top it with a dollop of whipped cream!

Monkey Bread is such a delicious dessert. This one has a twist with tropical flavors like coconut and pineapple - to make it perfect for summer!
Ingredients
- 1/2 loaf King's Hawaiian Sweet Sliced Bread
- 1 16oz can crushed pineapple
- 1/2 cup butter, softened
- 4 eggs
- 1 cup sugar
- 1 tsp vanilla extract
- 1/4 cup coconut flakes
Instructions
- Preheat oven to 350°F
- Cut bread into bite sized pieces
- In a bowl, cream butter and sugar
- Add eggs, one at a time, mixing well
- Add crushed pineapple and vanilla, mix well
- Place bread into greased bundt pan
- Top with shredded coconut
- Pour cream mixture evenly over top
- Bake for 1 hour
- Serve warm with a dollop of whipped cream
