What’s your favorite season? This is a tough question for me to answer because I like them all for different reasons. However, if I had to pick one it would be Summer. Here in Maryland, we do get a taste of all four seasons which is great.
Summer is my favorite because every year we take a beach trip with our family and get to spend lots of time outdoors! I also love the summer thunderstorms. The one thing I could do without is the mosquitoes!!
Cookouts are another fun reason to love summer. If you camp, summer is a great time to go too as long as you go somewhere that isn’t super humid!

- Green bell pepper
- Yellow bell pepper
- Red bell pepper
- Red onion
- Carrot
- Celery
- Broccoli
- Mayo
- Macaroni pasta
- Salt & Pepper

How do you make Veggie Macaroni Salad?
This macaroni salad is SO easy to make, so colorful and delicious!!
First, let’s prepare the macaroni per package directions, drain, rinse with cold water and set aside.
Next, dice up all of the veggies very small.

Finally, combine everything in a large bowl and mix until well combined.
Serve and enjoy!

Can you use other noodles?
Of course you can! Make this recipe however you feel is best or using whatever you have on hand. If you would like to use Whole Wheat or Gluten Free pasta, it will be delicious.

How long should this Veggie Pasta Salad chill before serving?
Ideally, chill for 4-6 hours before serving. It is best cold so try to make this one a little in advance of your event so that it can be served cool to maximize all of those flavors and colors.
How can I keep this chilled in warmer weather?
As I stated above, this pasta salad is best served cold. If you’re going to an outdoor event, consider using a chilling container like this one.

Ingredients
- ½ green bell pepper
- ½ yellow bell pepper
- ½ red bell pepper
- ½ red onion
- ½ carrot
- 2 stalks celery
- 1 small head broccoli
- ½ cup mayo
