Eating healthy is a challenge in today’s world- for everyone including me. Many of you know that we welcomed Liam into our family a few months ago and he has not only brought us a ton of joy but has also made our lives that much busier. That means that preparing dinner is almost a thing of the past for me, and my hubby has really stepped up in preparing dinner to ensure that we eat. ;). A friend of mine, Heather Arthur, is a consultant with Wildtree foods and she sent me an awesome variety of products to try out.

The Wildtree Story

When Leslie discovered that her two young children had medical conditions requiring special dietary restrictions, she began her search for healthy alternatives. “It was amazing how this impacted our entire family.” recalls Leslie. “I needed to come up with meals that my children would not react to, yet still enjoy. And since I was a full-time working mom, they had to be easy to make.”

Leslie sought the help of her mother and father, Frank and Judy. As concerned parents and grandparents, they immediately began experimenting with new ways to flavor and prepare foods. “It was really a hit and miss sort of process and we came up with some great ideas,” said Leslie. “I remember thinking that others could benefit from what we discovered; how to make mealtime an enjoyable and effortless experience, dietary restrictions or not!”

Leslie’s sincere desire to help others was the inspiration that led her to found Wildtree in 1996.

Leslie and Judy began by selling their specialty blends at local cooking fairs. They were overwhelmed by the reception and quickly gained a loyal following. When an enthusiastic customer asked Leslie if she had considered selling through home parties, she loved the idea. “I held my first party a few weeks later and knew it was the ideal way to bring our products directly to families.”

The combination of Leslie’s natural marketing ability, Judy’s talent for product development and Frank’s manufacturing expertise laid the foundation. Wildtree was officially launched in 1999 to local acclaim as a party plan company.

I was given the opportunity by a friend of mine, Heather Arthur, who is also a Wildtree consultant, to try out some awesome products. I had tried a few things before like the taco seasoning and grapeseed oil but always wanted to try more. She sent me a fantastic bundle of products to try out and I couldn’t wait to follow a few of the recipes that she sent along with the products.  The bundle she sent me was complete with the following products: Basil Pesto Sauce, Easy Irish Soda Bread, Greek Vinaigrette, Korean BBQ Sauce, Wildtree Wing Sauce, Natural Grapeseed Oil. I was excited to try out the new products that I hadn’t tried before. Out of this collection, the only product that I had tried was the Natural Grapeseed Oil- which is awesome!

When the products arrived, we weren’t sure which ones to try first but decided to make a stir fry with the Korean BBQ Sauce, which turned out to be awesome. We just sautéed some green peppers, and some chicken in the grapeseed oil and then added in some of the BBQ sauce to simmer. Yum!! We’ve made that a few times and it is delicious. The BBQ sauce is delicious, and perfect for stir fry. The next thing I made was the Irish Soda Bread- would you believe I’ve never had Irish Soda Bread?? Those that I work with certainly couldn’t believe it, but it was delicious and easy!! The next product that we want to try is the Wildtree Wing Sauce. With the products came an awesome menu planner which has a grocery list and recipes using those products in the pack. I’m excited to try these awesome Buffalo Chicken Enchiladas:

Buffalo Chicken Enchiladas

Don’t they look delicious?! Here’s the easy recipe for them:

14.5 oz. can diced tomatoes, no salt added, drained
8 oz. can tomato sauce, unsalted
4 oz. can diced green chiles
1/2 cup Wildtree Wing Sauce
3 oz. cream cheese
2 cups cooked, shredded chicken breast (see my post here for how to shred in your kitchen aid)
12 (6 inch) whole wheat tortillas
1⁄2 cup shredded cheddar

Preheat oven to 350°F. Heat diced tomatoes, tomato sauce, green chilies, and Wing Sauce in a skillet over medium heat. Add 2/3 cup of this sauce to the bottom of a 9×13 baking dish. Add the cream cheese to the skillet and stir until completely combined. Reserve 2/3 cup of this sauce. Add the chicken to the skillet and toss to combine, remove from heat. Place a tortilla on a working surface, fill with about 1⁄4 cup of the chicken mixture. Place rolled up enchilada seam side down in the baking dish. Repeat with remaining tortillas and chicken mixture. Pour reserved sauce over the enchiladas. Top with cheddar cheese. Bake for 15 minutes or until cheese is melted and enchiladas are heated through. Serve with toppings such as avocado, cilantro, lettuce, scallions, and diced tomatoes.

See, they’re easy and use items that you usually have in your house. We use Wildtree products in our house all of the time, they’re great to have on hand, and delicious!
